i just made this up, working with what i had in the kitchen, and it was so good.
preheat oven: 450 degrees
put these in a medium sized casserole dish:
* 5 boneless, skinless chicken thighs
* 1 yam - cubed
* 1 potato - cubed
* raspberry vinaigrette dressing - generously drizzle this all over.
bake for ~ 1hr, covered, turning the chicken over halfway through.
That sounds really good. You should post it on a recipe site
@opa i just made what i like to call... opa a la weiner aka beat weiner. i did your potato thing, sliced, sauteed in olive oil, salt & pepper, and threw in chopped up weiners. not too shabby!

I've never heard of a maris piper, so had to look that up! Is colcannon served hot (like mashed potatoes) or cold (like potato salad)? It looks really good!colcannon mmmm
I low boil 5 organic maris pipers (peeled) for 20 mins.
Add two leaves of shredded Savoy cabbage and finely sliced spring onion half way through.
Drain and mash the lot, adding salt, pepper and a large knob of butter.
Add finely sliced spring onion to garnish.
