Using up leftovers in the fridge is pretty much my favorite easy food. If I have leftover chicken, I'll just shred it up and make chicken salad and put it over mixed greens rather than bread. Tuna is always a quick go-to for me too. And sometimes I'll use potato/sweet potato chips instead of bread too.
When I used to eat pork, I loved taking leftover pork roast and shredding it and then throwing it in a pan with some chopped onions, sliced mushrooms, sliced carrots (like julienne cut), a little chopped garlic, and saute it with a little olive oil. Then I'd season it with a little rosemary, thyme, salt, pepper, a splash of orange juice, and a little bit of soy sauce. Then I'd put it in a gluten free wrap and kinda make a little taco out of it. It was AMAZING and super fast.
If I don't have any leftovers, and I really don't feel like cooking much, that's basically where stir fry comes in. I basically just chop up and saute whatever vegetables I have in some olive oil, season with salt, pepper, garlic, onion powder (if no onions), ginger, soy sauce and then put over cellophane noodles. I use mung bean noodles and they cook in the microwave within 5 mins.; I just put some water and the noodles in a bowl and let it steam/simmer on high.
Raw fudge: equal parts cacao powder, extra virgin coconut oil, and honey, then just stick it in the freezer.
