I have a bit of an obsession with hash browns lately. No joke. I much prefer making to buying. If you're willing to pay for your flight over here and meet me at a public location, I'll bring 'em!

Okay: probably doesn't live near a Waffle House.

Oh that's easy. After you grate the 'taters, wash the unholy bajeezus out of them with cold water to remove the excess starch. That way they don't clump and stick to the pan and each other and crisp up wonderfully.

Exactly. Dry them well with a paper towel, then toss them in a skillet preheated with high-heat vegetable oil (or ideally clarified butter if it's available*).

I like to season mine with cayenne pepper, smoked paprika, and Tony's after turning them once.

Heating: depending on your stove, 5 minutes per side at medium-high heat.

*clarified butter you can make yourself.
