Exactly. Dry them well with a paper towel, then toss them in a skillet preheated with high-heat vegetable oil (or ideally clarified butter if it's available*).
I like to season mine with cayenne pepper, smoked paprika, and
Tony's after turning them once.
Heating: depending on your stove, 5 minutes per side at medium-high heat.
