When there's eyes everywhere, yes, it's awkward. I had to go through that but thankfully it's all done and dusted for another year. Leap year, actually...one more day of relief!
A big smile and a few "thank you"s would suffice, I think. You don't have to squeal with excitement or go crazy to show your appreciation. And you could also send them a text/IM thanking them afterwards.
Can't say I don't like opening presents (I don't celebrate Christmas but I was involved in a Secret Santa gift swap thingy). I love the anticipation.

Something I look forward to most is seeing others open their presents. In particular this year, seeing my pups excitement opening his present on his first Christmas was very heartwarming
