I think I'm going insane

More than once I've "freaked out" on someone who I thought
Was talking about me. By freak out I mean curse them out, hit them, or shouted at them.
Afterwards I feel so stupid because I realize that what I've done is crazy.

Has anybody else experienced this?

This sounds like paranoia. If they did say something about you, then it's not necessarily a bad thing always. If someone insults you and you do something about it like curse them out then you are standing up for yourself which is a very good thing for a shy person to do. But if you are yelling and cursing all of the time then that would be out of control. You wouldn't be able to hold a job and would struggle in personal relationships. You should try to pick your spots to let your emotions go.
 
Next time go see the person and just ask. You should go and validate the "though" that you have just not with aggression or frustration. I use to freak out too but now I try to do it in a calm "assertive" way. It's all about confirming to yourself that people are not always talking bout you. Yes its frustrating but keep at it.

The fact that you ralise that such actions are crazy shows that you are not. As well as paranoia, this could be hyper-sensitivity. As others have said, it is important to verify what is being said before reacting in any way.
