I'm always looking for new inspirations and good eats. Out is great but so is making/seeing what others like/create themselves!

So - SPW chefs! Post whatever recipes you know/love/make. From PBJs to Foie Gras or baked goodies. All/any experiments welcome.

And - feel free to post PICS TOO of your creations. If you don't want to give away your secrets just taunt everyone =D

basically just a lazy sort of pizza

I had this for lunch yesterday.

slices of garlic loaf
mozzarella cheese (I used chipotle jack as a substitute)
thin slices of tomato (I picked them shortly before making this)
chopped basil (I also picked that shortly before making this :D)
crushed red pepper flakes (I used cayenne pepper as a substitute)

About 25ish minutes in the oven at 350 F, not on a pan--that way the bottom gets crunchier. Have to watch for dripping cheese though.

@Latte - interesting sounds like a yummy dressing.

Okay I should post my scrambled eggs thing later. Honestly breakfast only thing I know how to do.

Jambalaya (vegan or regular)

-1 onion, chopped
-3 cloves garlic, minced
-3 ribs celery, chopped
-1 red or green bell pepper, chopped
-1 1/2 cups uncooked brown rice
-1 6oz can tomato paste
-5 cups vegetable broth
-1 1/2 cups okra, chopped
-2 roma tomatoes, diced
-1 cup real or fake sausage
-1 real or fake chicken breast
-1tsp oregano
-1 tsp paprika
-1tsp cayenne pepper
-1tsp black fresh ground pepper
-1/2 tsp seasoned salt
-hot sauce

In a pot, bring to a boil 3 cups water, add rice, reduce heat a third and let cook 35-40 min.
During this, mix tomato paste and broth in a large bowl and set aside.
In a large pot, sautee onion, garlic, celery and bell pepper until slightly soft, about 5-10 min. Add hot sauce.
Separately cook meat/mock meat until 3/4 done, and chop (if using real chicken, cook all the way through).
Add broth mixture and rice to the sauteed vegetables, reduce heat, cover and simmer for about ten minutes, stirring occasionally.

Add hot sauce.

In a separate skillet, sautee the okra and chopped meat about 5-10 min.

Add hot sauce.

Add the okra, meat, spices, and diced tomatoes... and stir well! (May add hot sauce)
Cover, allow to simmer 10 min, occasionally stirring.

Serve with garlic loaf and hot sauce.

Serves 6-8 people or 2 wolves.

(I love hot food, but if your tongue is tender, take out hot sauce and halve the paprika and peppers)

Sausage, sweet potato and red onion frittata

2 tbsp olive oil
454 g Finest
British pork sausages
1 sweet potato (about 225g/8oz) peeled and thinly sliced
1 medium red onion, cut into thin wedges
50 g (2oz) baby spinach leaves, roughly sliced
8 large eggs
1 tbsp snipped chives, plus extra to garnish green salad, to serve

My favorite dish. Just made it for dinner tonight.

Spicy Basil Chicken (a Thai dish)

4-7 Thai Chiles (depending on your spice level preference)
1 bunch Thai basil
4 tablespoons Fish Sauce
2 tablespoons white sugar
1 lb ground chicken
2 tablespoons garlic
1-2 vegetables (for example, a white onion and a red pepper)

Prep work:
Mince the garlic and chiles. Chop the veggies into same size, stir-fryable chunks or strips. Pick all the leaves on the thai basil bunch and wash and dry them.

Cooking:
Preheat large frying pan to medium. Add 2 tbs oil. Stir fry the chiles and garlic until the garlic starts to brown. Add the meat. When it's almost all cooked (pink just about gone), add the fish sauce and sugar. Stir a bit then add in the veggies and basil. Let it simmer for a few minutes (or longer if you prefer less crisp veggies). Best served with steamed rice.

You can use any meat really. I use ground turkey. In restaurants, they often don't use ground meat, but traditionally, the dish calls for ground meat and it's better, IMHO.

(Note: I'm not Thai. I just love Thai food.)

Had this chicken vegetable soup for lunch yesterday. (Sorry for the horrible lighting)

Sorry I don't have any measurements, it's sort of just a "throw it all in a pot and simmer" type thing. :p Basically it was just made up of:

Chicken (Great to use up leftover chicken)
Chicken stock
Zucchini
Carrots
Onion
Celery
Salt
Pepper

I just sprinkled some fresh chives on the top and just added that little chive blossom for a little garnish.

Not really a recipe, but I've found that a block of cream cheese covered in pickapeppa sauce is delicious on crackers.
