Favorite Easy Foods

i just made this up, working with what i had in the kitchen, and it was so good.

preheat oven: 450 degrees

put these in a medium sized casserole dish:

* 5 boneless, skinless chicken thighs
* 1 yam - cubed
* 1 potato - cubed
* raspberry vinaigrette dressing - generously drizzle this all over.

bake for ~ 1hr, covered, turning the chicken over halfway through.

That sounds really good. You should post it on a recipe site :D

@opa i just made what i like to call... opa a la weiner aka beat weiner. i did your potato thing, sliced, sauteed in olive oil, salt & pepper, and threw in chopped up weiners. not too shabby!

Tonight I made a sort of mashed potato bowl for dinner. Instant mashed potatoes with salt, pepper, and chives, peas (frozen, just heated up), and leftover roast chicken all mixed together. Simple and pretty good. :thumbup:

ooooo now i just go to this post when i dont know what i want for dinner :) and yea it sounds weird but make some buttery popcorn and put some McCormick cinnamon and sugar and mix it with the popcorn its pretty awsome :popcorn: oh and also one of my faves is just classic smores. just put one large jet puffed marshmallow on two pieces of original Hershey chocolate and then put it in between two honey made graham crackers, then just put it in the microwave for like 10 seconds. Its really really good :) and good thread idea opa

Sometimes a good old fashioned PB&J sandwich will do though!

Add two leaves of shredded Savoy cabbage and finely sliced spring onion half way through.
Drain and mash the lot, adding salt, pepper and a large knob of butter.
Add finely sliced spring onion to garnish.

Fruit... the easiest yummy snack ever. Just take out the fresh fruit or thaw out the frozen fruit and eat. Add some yogurt if I want.

I've never heard of a maris piper, so had to look that up! Is colcannon served hot (like mashed potatoes) or cold (like potato salad)? It looks really good!

Served hot.

If you have left overs in the morning, you can make them into patties and flour them, then pan fry them to make "bubble and squeak"

Ooooh, those look even better! From the pic, it appears that they have some diced ham mixed in, which would be a nice addition. Little breakfast bites - nom!

yeah its nice with cooked bacon mixed with a little cheese.

Black Eyed Peas à la Graybeard:

1 can (15 oz.) black eyed peas
1 small can (4 oz.) mushrooms
2 oz. ham, diced
1/4 large sweet onion, diced
5-8 large olives, chopped (optional)
1/4 tsp. ham-flavored soup base
1 tsp. Italian seasoning
2 tsp. garlic powder
1/4 tsp. fresh-ground black pepper
1-2 tsp. Chinese mustard (for kicks)
1-2 oz. shredded mozzarella cheese

1. Mix all ingredients except cheese in a 2-quart sauce pan.
2. Heat on medium for about an hour or until hot.
3. Top with cheese.
4. Enjoy. :)
